BBQ Chicken Sandwich

Denny's Copycat Recipe

Makes 2 Sandwiches

Sweet Hickory Spread:
3 tablespoons butter
1 cup minced onion
2 teaspoons flour
1/4 cup molasses
1/4 cup water
2 tablespoons white vinegar
1/8 teaspoon hickory salt

Onion Rings:
1 cup thinly sliced onion, separated into rings
1 cup milk
1 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
2 cup canola oil

Chicken Sandwich:
2 boneless skinless chicken breast fillets
vegetable oil
salt and pepper to taste
2 sesame seed hamburger buns
2 tablespoons melted butter
2 green lettuce leaves
2 tomatoes
2 slices Cheddar cheese

To make Hickory Spread:  Melt 3 tablespoons of butter over medium heat.  Add the minced onion  and saute for 7 to 9 minutes or until the onions start to brown. Add 2 teaspoons of flour and stir until the flour is mixed.  Let this cook for a minute or two, then add the water, molasses, vinegar and salt.  Simmer the sauce for 3 to 4 minutes or until thick.

To make Onion Rings:  Pour the milk into a large bowl.Combine flour, salt and pepper into another bowl. dip the onions into the flour mixture first, then into the milk and back into the flour.  Arrange all the coated rings onto a plate to rest while you heat up the canola oil in a deep fryer at 375 degrees. When the oil is hot fry rings in batches about 3 to 5 minutes until they get golden brown. Drain on paper towel.

To cook Chicken: Preheat skillet or grill pan over medium heat.  Pound chicken with a mallet to thin them out.  Season then with salt and pepper.  Grill each fillet for 4 to 6 minutes per side until done.

Toast Buns: Spread a little melted butter on the hamburger faces and toast on the grill.

Assembly: Build each sandwich by putting the hickory spread on the bottom bun.  Add lettuce, tomatoes, chicken breast and cheddar cheese. Stack a few onion rings on top of the sandwich and crown with the bun top.
